Launching on June 19 and held every third Friday through November, Rossini's Aperitivo Escape is a seated, immersive journey through Italy's most legendary wine regions, hosted within the restaurant's private dining room at Sheraton Grande Sukhumvit. Each edition is conceived as a chapter — exploring a distinct region, character and winemaking tradition of Italy.

Every wine is introduced with context and intention, paired alongside handcrafted Italian specialities by chef Stefano Merlo. The result is a space where conversation is unhurried, glasses are refilled and guests find themselves transported to Italy. The inaugural edition celebrates the breadth and depth of Italian winemaking through ten distinguished bottles, each representing the soul of its region.

Expect Barolo DOCG, Piedmont, the king of Italian wines; structured and complex, with rose petal, dark cherry and truffle depth; Brunello di Montalcino, Tuscany, velvety and age-worthy, layered with wild berry, leather and spice; Franciacorta DOCG, Italy's finest sparkling wine; refined mousse, green apple and toasted brioche; among others.

Each wine is accompanied by an elegant selection of artisan Italian cheeses and charcuterie, classic pasta creations, and traditional Italian desserts — a full expression of Italy's convivial dining culture. On July 17, "Italian Islands — Sicily & Sardinia" will be featured; Aug 21 will see "Coastal Vineyards"; Sept 18 will showcase Tuscany; Oct 16 will spotlight Piedmont; and Nov 20 will highlight The Apennines.

Explora III introduces a more expressive approach to epicurean excellence — shaped by curiosity, personalisation and emotional connection. At the heart of vision is The Cellar by Explora Journeys, an intimate wine experience featuring nearly 350 labels. The selection balances legendary icons such as Pétrus, Château Le Pin, Harlan Estate and Screaming Eagle with unexpected discoveries from emerging and lesser-known wine regions including Lebanon, England, Hungary, Romania, Japan and China. The Chef’s Table by Explora Journeys is a new dining concept centred entirely on co-creation and personal expression. Guests are invited to share their preferences and inspirations with the culinary team to shape every aspect of the evening, from the menu and pairings to the atmosphere and inspiration behind the moment itself. It may begin with a favourite flavour, a cherished memory, a destination visited during the Journey or ingredients sourced locally along the way. The Chef’s Table is entirely bespoke and personal, and represents one of the most exclusive and individualised culinary experiences at sea.

Positioned beside the Conservatory Pool, Shore Club on 11 at The Conservatory introduces a poolside experience inspired by the convivial rhythm of Mediterranean summers. Designed for long, unhurried afternoons by the water, the venue offers made-to-order Mediterranean-inspired cuisine, from vibrant salads and grilled favourites to savoury and sweet crêpes, artisanal gelato and wellness-led options. A playful beverage programme featuring crafted cocktails and a wide selection of alcohol-free creations further reinforces the fresh, modern spirit of the experience.
